Copycat Peppermint Patties Recipe

Just as delicious as their namesake, I was pleasantly surprised at how easy these are to make. I love putting them in ice cream or as a quick, refreshing treat when it’s hot out. They also make a great homemade gift.

Peppermint Patties

In a bowl mix together ½ cup of butter, 7 oz. of marshmallow crème, 1 teaspoon of peppermint extract and and 1 teaspoon of vanilla extract.

Slowly add in the 5 cups of powdered sugar. If you’re using a mixer, use the paddle – it gets pretty stiff and will bend the whisk attachment.

Scoop out a rounded teaspoon of the mixture and roll it into a ball. Then, flatten into a disk to about 1/8 inch thick. Place on parchment paper lined plate or tray. Place in the freeze for at least one hour.

In a microwave safe medium, flat bottomed bowl, melt half of a 24 oz. package of Almond Bark in the microwave on high for 90 seconds. Stir until smooth. Continue to heat in 20 second increments, stirring after each, until it is smooth.

Remove the frozen patties a few at a time and place into the melted bark to cover completely. Use a spoon to cover the top. Use a fork to pick up underneath the patty. Tap straight up and down on the side of the bowl to even out the coating and remove some of the excess.

Place onto another piece of parchment and let set.

Melt additional Almond bark as needed.
