Life in the midwest during fall is as follows, in no particular order: sweaters, pumpkins, carbs, wine, more carbs, probably more wine if you have kids, and anything pumpkin spice. 

I love it all. Especially the carbs. And the wine.

There are downsides to fall, however. It gets darker earlier and it feels like midnight at dinner time. We’re already tired and none of us want to cook, let alone wash dishes. I can Pin recipes with the best of them, but then motivation leaves me when it’s time to cook. And comfort food dishes are exhausting – at least that’s what I thought until I discovered one pot cooking with Barilla Pronto Pasta and created this amazing Tuscan Herb Penne With Sausage recipe!

Ingredients
  1. 1 box Barilla® Pronto™ Penne
  2. 3 cups cold water
  3. 1 package of Italian sausage, mild or spicy
  4. 1 package of arugula & spinach salad mix
  5. ½ cup Parmigiano-Reggiano cheese grated
  6. Salt and black pepper to taste
Special Occasion
  1. 1 bottle of Estancia Cabernet Sauvignon or Pinot Noir
  2. 1 package of Pepperidge Farm Cookie Collection
Instructions
  1. Brown the entire package of sausage in a large skillet. Once browned, let the pan cool for 5 minutes.
  2. Pour the entire box of Barilla Pronto Penne. Pour cold water into the pan, making sure that the water just covers the sausage and pasta.
  3. Set the burner on high and cook for 10 minutes, stirring regularly, until all the water is absorbed.
  4. Once water is absorbed and pasta reaches desired tenderness, remove from heat and stir in greens and cheese.
  5. Serve immediately, topping with more cheese.
Notes
  1. If you feel like cooking the sausage has left too much grease, then use a paper towel to wipe the pan until you've absorbed enough grease.
