Once I made these Peanut Butter and Banana Waffles for my family, plain waffles just didn’t compare any longer. In fact, my daughter started to request that we make extra on the weekends so that I could pack them in her lunches! These delicious peanut butter and banana waffles are perfect for breakfast, packed in a lunch in place of a boring sandwich, or frozen for a busy weekday morning breakfast on the go.

Peanut Butter & Banana Waffles

Serves 4-6

Peanut Butter & Banana Waffles

Ingredients

  • 1 3/4 cups unbleached, all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 Tblsp. sugar
  • 2 tsp. baking soda
  • 1/2 c. Jif® Peanut Butter
  • 2 very ripe bananas, mashed well
  • 2 large eggs
  • 1/4 c. unsalted butter
  • 2 c. milk
  • 1/2 tsp. vanilla extract

Mix together and sift dry ingredients.

Mix wet ingredients in a bowl with stand mixer or hand mixer.

Add to dry ingredients and mix well. There will be some lumps.

Once mixed, add to your waffle maker (according to waffle maker instructions)

Top with Smucker's® Fruit Spread

Notes

Since I can't pack syrup with my kid's lunch, I like to add a little Maple Extract (about 1/2 tsp) to the batter for added flavor. This is optional.

Ella loves to help making this recipe, especially when it comes to mashing the bananas. This is the perfect recipe for which to use those beat up, browning bananas. The more ripe they are, the sweeter the batter!

Once you mix the ingredients together, pour the batter onto your waffle iron and get the Smucker’s Fruit Spread ready! I also like to add just a touch of powdered sugar to the top; Ella calls it “Snow Sugar” so it seems fitting for this time of year.
